So since removing animal products from my diet guacamole has become my friend. I never used to care for it before, never would have ordered it out or even made it at home. For some reason it appeals to my taste these days and it makes an appearance at our house about once a week now. Well, until this weekend. My sister Kelly, who has been the person I can give credit to for expanding my recipe box over and over again and is the one who gave me my first recipe box. We constantly share recipes and boy did she bring home a winner! I’ve never even heard of using avocados in dip form other than for guacamole. And seriously, who would have ever thunk avocados and craisins would be a good combo? So maybe we should change the name to Craisin Avocado Salsa….
So here it is:
Cranberry Avocado Salsa
1 Tablespoon fresh lime juice
2 Tablespoons of honey
1 minced jalapeno
1/4 cup red onion, chopped
3/4 cup halved cranberries (I use dried cranberries instead)
2 Tablespoons chopped fresh cilantro
coarse salt and ground pepper
1) In large bowl, whisk together 1T fresh lime juice, 2T honey, 1 minced jalapeno (seeds removed for less heat, if desired), and 1/4 cup chopped red onion
2) Add 2 ripe avocados, cut into 1/4 inch pieces, 3/4 cup halved cranberries, and 2 tablespoons chopped fresh cilantro. Season with coarse salt and ground pepper. Toss gently to combine.
